今天做一个可以消耗蛋清的小点心,抹茶芝麻薄脆饼。

超简单做法,分分钟搞定,越嚼越香,酥酥脆脆好吃的停不下来。


【原料】

蛋清————40克

细砂糖———20克

低筋面粉——5克

玉米油———15克

抹茶粉———5克

熟白芝麻——25克


【 *** 过程】

1、我们先把抹茶粉化开,取玉米油5克、抹茶粉5克,搅拌至抹茶粉完全化开放一边备用。

2、接着取蛋清40克、细砂糖20克,搅拌至乳化均匀。

3、筛入低筋面粉5克,搅拌均匀。

4、加入玉米油15克,搅拌均匀。

5、加入准备好的抹茶糊,搅拌至颜色均匀。

6、加入熟白芝麻25克,搅拌均匀即可。

7、把面糊装入裱花袋,然后挤在马卡龙模型垫上。轻轻的震几下烤盘,让面糊自然摊平。

8、烤箱提前10分钟预热,温度170℃,烤制20-25分钟,注意看饼干边缘的颜色,看到边缘微微变焦,就是好了。取出放凉一会,就可以脱模了

9、抹茶芝麻薄脆饼,完成O(∩_∩)O

10、凉了以后非常的酥脆,一口下去酥香中带着茶香。

11、越嚼越香,酥酥脆脆好吃的停不下来。

这个饼的做法是我跟妈妈学来的,真的特别好吃,表皮儿酥脆,里面软软的,鸡蛋和面,黑芝麻油酥,孩子特别喜欢吃。早餐搭配一碗玉米珍粥+煮鸡蛋+一碟小菜,简直完美的不要不要的!适合一家人吃,两岁的宝宝也能吃!

早上8:40把面团揉好发酵,9:30带孩子出去玩,10:00到家的时候面团已经醒发好了!

今日份食材

小麦粉8杯(量杯是160毫升),鸡蛋一颗,酵母粉两勺,黑芝麻,玉米油。

  • 面盆里倒入8个量杯小麦粉

  • 打入一颗鸡蛋,加入两勺酵母粉,酵母多点少点没有关系,我这里加了两勺,一个小时面就长大了。

  • 温水和面,慢慢倒水,边倒边搅。搅成下图絮状,上手揉面。这样揉面手不容易沾上面疙瘩。

  • 揉成光滑的面团,盖上盖子让面团发酵。让面团好好睡个美容觉!

  • 发酵一个半小时,出现蜂窝状就说明面团发酵成功。如果没有出现蜂窝,说明发酵的时间太短了,还要盖上盖子继续发酵。下次可以多放些酵母粉。

  • 准备一个干净的小碗,放入半碗小麦粉,一小勺食用盐,一勺白砂糖。不喜欢吃甜的可以不放糖,放食用盐就行了。

  • 铁锅烧油,油热浇到碗里,搅拌至糊糊即可。

  • 揉面团,分成两个大小均匀的面团。盖上保鲜膜或者扣上面盆,再放置5到10分钟,让面团再次醒发,此时醒发好的面团拿在手里轻飘飘的。

  • 取一个面团擀成筷子薄厚的圆形,技术好的可以擀成长方形。

  • 均匀抹上油酥,撒上黑芝麻。

  • 对三折。

  • 再对三折。

  • 先用手掌压开,再用擀面杖,擀成跟锅差不多大小的形状就可以了。

  • 笼屉上放上笼屉布,没有笼屉布的在蒸笼上刷一层油。
  • 把饼放进去,这里我做了两个,上下两层,盖好盖子。大火蒸25分钟,注意火苗铺满锅底就好。

  • 接下来,我们煮点玉米珍粥。一定记得看时间,大火蒸25分钟就行了。

  • 25分钟到了,关火拿出。把饼倒扣在案板上,笼屉布上均匀抹上水,这样笼屉布才能撕掉,直接撕的话就把饼撕坏了。

  • 电饼铛刷油,上下火模式,放入大饼,饼上面也刷点油。盖上盖子,烙至两面金黄即可。

  • 装盘。

  • 此时玉米珍粥也煮好了。

1 / 300克中筋面粉+5克白砂糖+4克酵母粉,沿容器壁倒入35℃的180克清水,用筷子搅拌成面絮,揉成面团,不需要发酵,放在一旁备用;

2 / 调制油酥:一勺面粉+1克盐+两勺熟油混合均匀,至粘稠稀油酥状,备用;

3 / 案板撒面粉,将面团擀成长方形薄面片(大概5mm厚),淋上油酥,用刮片涂抹均匀;

4 / 将面片卷起,轻揉成粗细均匀的长条,用刮片切割成差不多大小的八个面剂;

5 / 取一条面剂,捏合两端,对折再用虎口捏合,轻轻按压在底部,团成近圆的小面团;
