·先将蒜苔切段,五花肉切片。
·将肉片放入碗中,加入一勺盐、少许胡椒粉、生抽提鲜,打入一个鸡蛋清,加入少量玉米淀粉,用手抓匀,使其上劲。这样腌制的肉片口感特别嫩滑。
·最后加入食用油拌匀,这样滑肉时不会粘连。
·将肉片放入五成热的油中,用漏勺划开划散,腌制过的肉片特别嫩滑,只需要两分钟就熟了,用漏勺捞出控油。
·另起锅烧油,放入蒜苔,开大火翻炒两分钟。炒蒜苔时一定要用大火,这样炒出来的蒜苔颜色碧绿,味道更香。
·炒熟后放入滑好的肉,加入葱花、蒜片、半勺生抽、老抽调色、味精、鸡精,炒家常菜时可以加入适量十三香,这样味道更佳。

- 做腌蒜苔,一定要选择初春最鲜嫩的蒜苔,先摘洗干净,去掉头尾,充分晾干水份,切记水份一定要晾干,否则就容易长毛变质。
- 把蒜苔切成2-3厘米长的小段,放一勺盐,腌制2个小时以上,把蒜苔用盐腌一下,不仅可以去除蒜苔的辣味,还可以保持蒜苔长时间的脆爽。
- 趁着蒜苔杀水的时间,来 *** 料水,以一斤蒜苔为例:150毫升生抽、150毫升陈醋、20克冰糖、一小把花椒、两颗八角。把以上调料煮开关火,彻底晾凉备用。
- 蒜苔腌制2个小时,会杀出一部分水分,捏一下蒜苔,变得软软的即可。放到一个无水无油的密封罐中,再放几片生姜,根据能吃辣的程度放适量小米辣。
5. 把晾凉的料水倒进密封罐中,没过蒜苔即可。封口前滴去几滴高度白酒,可以保证蒜苔存放的时间更久。
- 放入冰箱密封保存12个小时即可开吃。吃的时候再放入几滴香油会更香。

今天晚上咱们来一个过油肉炒蒜苔。蒜苔给切好了以后,拿水给它泡下,一个是让它吸收点水分,一个是去一下蒜苔的辣味。配料有胡萝卜丝、姜丝、葱丝。现在教大家腌这个肉。这我泡两个小时水,水已经泡出去了,稍微给点酱油,酱油倒的意思了,就像肉不是不是白不拉碴的了。
看完了打一个鸡蛋给它搅拌,把鸡蛋都糊在鸡蛋上,完了搁玉米淀粉放着,你们自己看放多少,把玉米淀粉都裹在肉上就行,就成这样就行。每个肉片都挂的这是浆,都挂的玉米淀粉,这时候看着防止粘连。给搁点油,就像我这样的,每一个你看肉都给挂上玉米淀粉。现在油温就烧成这样,你看筷子进去以后冒泡了,这时候把肉倒进去慢点,不能硬扒拉,给它定一下行完了再扒拉,你要是就进去以后这样一晃悠,把上面的浆都晃悠下去,那肉过出来就老了。
炸至这个肉的颜色,捞出来备用。过完肉的油不要倒,把蒜苔搁进去2分钟就行。还有这点胡萝卜条,烫2分钟拿油烫2分钟,捞出来备用。
倒点油葱羹姜它不用搁蒜,因为蒜苔它不用搁蒜,搁点姜还葱就行,爆一下香味就行。这时候我们把蒜苔倒进来煸炒一下,给倒点酱油,搁点鸡精再煸炒。把这过去的过油肉再倒进来,现在出锅。
