豆腐早在一千多年前的汉代就已经有了,那个时候人们把豆腐称之为“小宰羊”,可见那时的人们把豆腐的营养价值和羊肉的营养价值划等号了。的确豆腐的鲜嫩和超高的营养价值我们是很难有拒绝的理由,用豆腐做出来的菜肴更是无法舍弃,不论是单一的豆腐,还是和任何食材搭配,总是能给人一种惊艳。

各个地方,每个人做红烧豆腐的 *** 都会不同,做出来的味道也就多滋多味,都是按照自己的喜好方向来走,今天我就用老豆腐(北豆腐)来做一道红烧豆腐,我没有选用嫩豆腐(南豆腐)来做是因为我要把豆腐炸一下,如果用南豆腐的话就很容易翻车,我可丢不起那人。
红烧豆腐的做法:
【主料】:老豆腐2块(用老豆腐不管是在炸还是在后期焖煮都不容易烂,如果用嫩豆腐那就需要一定的技巧和十分的小心翼翼)。
【配料】:蒜子3瓣、菜心6颗、红辣椒1个、干香菇6朵。
【调料】:食用油、食用盐、蚝油20克、生抽5克、老抽3克、鸡精3克、香料油5克。水淀粉20克。
【准备工作】:
1、老豆腐一开二后再切成1厘米左右的片,也可以切成自己喜欢的形状,比如小方块或者三角片都可以。
切好后装漏勺中摊开,这样摊开的好处就是下锅时更不会粘在一起。
2、干香菇先清洗干净后用200克的清水浸泡1个小时。
泡好后捞出,切去根部后切条,泡香菇的水留用。如果是大一点的香菇就一开三,我这次用的是小香菇,所以一开二。
3、红辣椒去头去尾去籽后切片备用。
4、蒜子轻拍后切片备用。
5、菜心要清洗干净备用,不喜欢菜心的可以改用自己喜欢的绿色蔬菜,或者不用蔬菜围边,改用蒜苗增加绿色或者就撒点葱花点缀一下。
【烹饪 *** 】:
1、起锅烧水,加小半勺盐和少许的油,加盐和油可以起到让蔬菜增加一个底味,同时也能有效防止氧化酶破坏蔬菜中的叶绿素,在保持蔬菜鲜亮的颜色的基础上变得更加翠绿,也可以起到在焯水的时候减少蔬菜营养流失的作用。
2、水沸腾后放入菜心开始焯水,大概10秒后捞出控水备用。蔬菜焯水时一定开水下锅,焯水时间不宜过长,否则会导致蔬菜过于软烂,这样吃起来的口感就会变得很差,也直接影响蔬菜的美观。
3、把红辣椒片倒入锅内焯水,大概10秒后捞出控水备用。红辣椒在这里主要是起配色用的。如果喜欢吃辣的可以改用小米椒。
4、起锅下宽油,把油温加热到8成热(240度),如何判断油温到了8成热呢?油下锅后开大火,等可以看到锅边开始有冒烟的状态,那就说明油温大概有200多度了。
5、豆腐下锅前要用清水先冲洗一下,这样炸出来的豆腐会更加金黄,更鲜嫩,同时也能去除一部分豆腥味。冲水后尽量沥干水。
6、注意!注意!注意!豆腐下锅前一定要先关火后再把豆腐倒进锅内,因为豆腐含水量很高,一旦遇上高油温就很可能出现爆油的现象,那么溅出来的油遇上明火就会燃烧起来而引发火灾。
为什么豆腐下锅时油温一定要高呢?因为只有高油温才能瞬间把豆腐炸至定型,相互才不会粘在一起,如果油温太低炸出来的豆腐会越炸越干,还不上色,这样既不好看,也不好吃。所以豆腐下锅时的油温最少都要7成热(210度)以上。
7、豆腐下锅后开火把豆腐炸至金黄后就要起锅控油,不要过于贪念金黄的外表和酥脆的外壳,要知道从金黄到焦黑就只有一步之遥。
如果不想用油炸的 *** ,还可以用少量的油来煎豆腐,锅内加少量的油,然后在锅内撒上一些盐,撒盐的目的是可以防止豆腐粘锅,也可以起到去除豆腐的豆腥味,豆腐在煎的时候要不停地晃动锅,让豆腐在锅内滑动,这样豆腐就更不会烧焦,煎到两面金黄就可以起锅。
8、热锅加少量的大油(猪油),没有猪油的就加其它的油,油温3成热下蒜片炒出香味。
9、蒜香味出来后加入20克蚝油,这道菜我们主要以蚝油的味道为主,所以放的量就比较重一点。把蚝油煸炒一下,炒出蚝油的香味,但是煸炒的时间不要太久,最多有10秒就足矣。
10、把泡香菇的水倒入锅内。干香菇的香气要比新鲜香菇的要浓郁得多,泡过香菇的水也带有香菇的菌香味。
11、水沸腾后把豆腐和香菇一起倒进锅内,再加入少许的盐调味,如果平常吃得比较淡的可以不用加盐,这道菜加入的蚝油、生抽和老抽带来的咸味就足矣。
12、加入生抽调味,用勺子推动锅底,让味道散布更均匀,这样豆腐也能吸收各种调味料的味道。
13、然后开大火把汤汁烧开后改小火焖煮3分钟,让豆腐慢慢地入味。
14、焖煮好后加入少量的鸡精增鲜,不喜欢鸡精的可以用少许的白糖代替。
15、加入水淀粉勾芡,在加水淀粉的时候边淋入边用手勺推动锅底,这样才能勾芡均匀。
16、加入老抽调色,让豆腐的颜色更深一些,这样看起来才更能勾起你的食欲。
17、把辣椒片放入锅内,因为这个主要是起配色用的,前面我们已经做了焯水处理,所以就不用担心有没有熟,有没有出味的问题。
18、出锅前淋入少量明油就可以起锅装盘,有香料油的更佳,我们平时可以多备一些香料油,用来炒菜可以给菜肴增加一种复合型的香味,直接就可以把菜品的味道拉升一个档次。
19、把焯好水的白菜芯围在盘子的边上,这样也是直接把这道菜拉升了一个档次。
20、好看,好吃,老下饭了。

今天的这道红烧豆腐更具南方风味,虽然没辣,但还是相当的美味,围边的菜心沾上汤汁那就是一个简易的蚝油菜心妥妥的美味。

少食多餐。到了“饭点”却不想吃饭,三餐不准时,每天只吃一两顿饭,这是多数人的真实写照。綦翠华解释说,宅在家里缺乏一定的运动和能量消耗,三餐所需的食物摄取量自然减少,所以很多人感觉不饿就不吃了,原本正常的饮食规律失衡。吃不下不必勉强自己,但要保证三餐按时吃,可以少食多餐,正餐不必吃太多,吃太多消化不良,更容易导致食欲不振。三餐之间少吃一点水果、酸奶、坚果等,一定不要吃糖果、糕点等零食,这些除了能量高,还会造成消化功能紊乱,导致食欲减退。

巧用调味料。中国菜之所以美味,最重要的一个原因就是“调味”。不同的人做同一道菜,各不相同。菜肴中用好调味料,绝对可以让人食欲大开,唤醒味觉。綦翠华说,香醋、蚝油、辣椒,姜蒜等,都是我们常见的调味料,凉拌菜中加点蚝油,炒菜中加点香醋,煲汤中加点姜片、香叶,可以使菜品增鲜提色、香气四溢。咖喱辣中带甜,具有一种特别的香气,能够促进唾液和胃液的分泌,增加胃肠蠕动,增进食欲,可以用于烹调牛羊肉、鸡、鸭、螃蟹、土豆、汤羹等。
颜色多样。颜色也能控制食欲,因此一道美食必定是“色香味俱全”。研究发现,蓝色、黑色的食物会降低人的食欲,绿色的食物让人看着健康有营养,最勾人食欲的颜色是红色,食欲不佳时,不妨多吃一些红黄色食物、绿叶菜等。比如,西红柿、胡萝卜、草莓等看着鲜艳有食欲的果蔬。
食之本味。有些人没食欲可能是以往饮食过于甜咸油腻,此时如果吃不下汁浓味鲜的菜肴,不妨利用蒸、炖等简单方式激发食材本身的香味。比如,主食换成蒸煮的红薯、紫薯、山药等粗粮,肉食可以用焖蒸和清炖的 *** ,糖醋排骨、红烧鱼改成海带排骨汤、清蒸鱼。如果是胃肠功能紊乱引起的消化不良,导致食欲不振,吃些开胃的清粥咸菜,喝点小米粥、南瓜粥、皮蛋瘦肉粥等。

豆腐是最常见的大豆产品之一,也称为水豆腐。传说它是由淮南六安国王或关羽和乐义发明的。
豆腐是中国传统食品,美味健康,不受季节限制,富含蛋白质。今天,我将向您介绍用豆腐制成的美味佳肴。外面酥脆,里面柔嫩。它比大鱼和肉更好,而且比红烧猪肉更健康!
红烧豆腐原料:
2块豆腐
1个葱
5瓣大蒜
3小米辣椒
1个鸡蛋
1汤匙蚝油
1汤匙酱油
1茶匙盐
1茶匙胡椒粉
红油
*** *** :
1.一只大葱,切碎的大葱,剁碎的蒜瓣和剁成小米椒的辣椒圈。将豆腐切成1.5厘米的块。
2.将鸡蛋打入碗中,打打,将其倒在切好的豆腐上,拌匀并放在一边,最后过滤掉多余的蛋液并放在一边。
3.调制酱油,1汤匙蚝油,1汤匙酱油,1汤匙盐,1汤匙胡椒粉,适量的红油,1汤匙干淀粉,加半碗水,搅拌均匀放在一边
4.将植物油放入锅中,加热,然后逐块添加豆腐以防止粘连。
煎至两面都金黄,然后放在一边。
5.将锅底油留在锅中,加入蒜末,小米和胡椒粉至香,加入调味酱,豆腐,使汤在豆腐上。烧开后,转小火煮30分钟,得到完整的风味。
30分钟后,打开高温以收集汁液,撒上切碎的葱,搅拌均匀,然后即可食用。
菜肴的特点:鲜红色,外表酥脆,内里柔嫩,每口都有汤,令人耳目一新,美味可口。
备注:
①豆腐可以用普通豆腐或老豆腐制成。它涂有蛋液,油炸时色泽更好,口感更脆,味道更佳。
②将豆腐切成小块放在锅中,否则粘在一起很容易腐烂。请勿使用铲子铲子。轻轻摇动锅,豆腐自然滑动。设置好地面后,它的背面不会散开。
③豆腐要煮30分钟才能充分吸收汤汁,外皮酥脆,内里鲜嫩,汁液破裂。

用料- 内酯豆腐 1盒
- 肉沫 100克
- 蒜末 2茶匙
- 大喜大烤肉酱 1袋
1、起油锅,下蒜末,炒香,再下肉沫,炒熟后倒入一勺生抽和一袋大喜大烤肉酱,我用的原味的,炒匀后盛出备用
2、不洗锅,下豆腐,用铲子切成块,把刚刚炒好的酱倒进去,铺满豆腐
3、盖盖焖2分钟
4、起锅
5、大喜大的烤肉酱带一股香甜,入口鲜香味美,味道浓郁,我觉得可以酱烧万物

下面分享一道美味健康营养的家常菜,简单快手易操作。
具体步骤:
1.准备食材:日本豆腐三条 青红椒适量 大蒜三瓣 水发木耳适量
2.将青红椒切成小块,大蒜切片,焯过水的木耳撕成小朵。
3.准备一个空碗,倒入三勺生抽,一勺香醋,一勺蚝油,一勺白糖,一勺淀粉,盐,鸡精适量,半碗清水,搅拌均匀调成碗汁儿。
4.日本豆腐切成1厘米厚的厚片,装盘待用。
5.准备一个空盘,倒入淀粉,将成片的日本豆腐放入淀粉中,使其表面均匀沾上淀粉,装盘备用。
6.热锅倒油,中小火将蘸上淀粉的日本豆腐煎至两面金黄,盛出备用。
7.不用刷锅,利用锅内剩下的油爆香蒜片。
8.炒出香味后放入青红椒片和木耳。翻炒至青红椒断生。
9.放入日本豆腐。
10.倒入碗汁儿。
11.翻炒均匀.大火收汁。
12.待汤汁浓稠即可出锅装盘。

豆腐既便宜又好吃,做法也很多,今天在小区门口菜店买了一块,本打算做小葱拌豆腐,但在老公的要求下还是做了红烧豆腐,没想到味道非常棒,配米饭真的好吃呀。
1、先把原材料准备一下:豆腐切成薄的三角片,1把泡发的木耳、青红椒切菱形片、葱姜和一小块胡萝卜。
2、先把豆腐煎一下,煎至两面金黄,煎的时候锅底撒一点盐,防止粘锅还能入底味。
3、然后锅里加入适量的开水,把木耳和胡萝卜放入锅中,烧开后调味:1勺胡椒粉,半勺糖,半勺鸡精,1勺生抽,几滴老抽,再淋入一点花椒油。
4、锅里汤汁收的剩一点后,把青红椒放锅中,断生后撒一些葱花即可出锅。
5、出锅装盘,真的好香。
温馨提醒:
1.煎豆腐的时候放盐了,所以后面不需要加盐;
2.淋入几点花椒油,增香又增色,味道也很好;
3.最后也可以勾一点薄芡,颜色会更亮。
