今天为大家分享一道“红豆花卷”的做法,对于北方人来说,花卷再熟悉不过了,从小吃到大的味道,更是思念与怀念的味道,为什么这样说呢,因为现在已经越来越少的人,再去做这道家常面食了,更多的是选择在街上买,虽然方便但是总感觉味道就是不对。
下面就为大家详细的分享一道,红豆花卷的做法,在不失馒头的劲道口感外,又增添了一点营养丰富的红豆,不但好吃看起来也不错哦。
【红豆花卷】
1.首先,我们准备面粉200克,放入酵母3克,白糖10克,促进酵母发酵,用清水和面,多次少量的添加,把面絮揉在一起,揉成光滑的面团,用盘子盖住,常温发酵1个小时就可以了。
2.趁着发面的时间,我们把红豆蒸一下,这是前一天晚上泡上的红豆,已经泡软了,我们把它倒在蒸笼里面,上汽以后开始计时,蒸15分钟就可以了,红豆蒸熟以后取出来,倒入盆中晾凉备用。
3.一个小时以后,我们在案板上撒上底面,把发好的面团拿出来,多揉一会,排排气,然后把面团搓成长条,下6到8个面剂子,把面剂子揉一揉揉圆,用细布盖住,以免表面受风变干,红豆晾凉以后,在里面放入一勺白糖,拌匀备用。
4.把圆面坯摁扁,擀成圆形的面片,在面片上挖入适量的红豆馅,像包包子那样把开口收紧,然后放在案板上擀成牛舌状,翻过来刷上一点清水增加黏性,再从一头卷起来,红豆卷的生坯就做好了,全部做好以后,用细布盖住,再次发酵10分钟,蒸出来更加蓬松暄软。
5.水烧开以后,把发酵好的红豆卷放入蒸锅里面,盖上锅盖蒸15分钟。
6.15分钟以后关火再焖2分钟,散一散热气,以免花卷突然遇冷塌陷,白白胖胖的花卷就可以出锅了。

准备食材:
面粉1斤,酵母一袋
具体做法步骤如下:
1.盆内装入1斤面粉,加入3克酵母粉,搅拌均匀。
2.盆内加入30度左右的温水,搅拌均匀,把面粉搅成面絮。
3.搅成面絮后,下手揉面,揉至成光滑的面团。
4.面团上刷一层油,盖上保鲜膜,发酵至2倍大。
5.锅内加入适量的油,下入葱末,加入适量的盐,炒香,盛出备用。
6.面发好以后,简单揉一下,案板上撒3克碱,搓细,把碱均匀的揉进面团里。这样夏天发面不容易酸。
7.面团揉成长条,用擀面杖擀扁擀长,均匀的刷上葱油。
8.把面皮折叠起来,一宽一窄的,切成段。
9.取一宽一窄的面段,窄的摞在上面,用筷子在中间压一下。
10.把面条拉长,筷子压在中间,两边对折。
11.捏住两头,旋转2圈,放在案板上压一下,把筷子抽出。
12.花卷下面垫上玉米皮,均匀的摆在笼屉里,彼此之间留一些空隙。
13.锅内加水,把花卷放入锅内,醒发15分钟,然后,开火,大火烧开,上蒸汽以后,再蒸15-20分钟,关火焖2分钟,花卷就做好了,可以出锅啦!
温馨提示:
- 花卷的面要尽量揉的软一些。
- 不喜欢吃葱油味的也可以不加葱油。
- 关火再焖2分钟的目的是为了防止开锅的时候,水滴滴在花卷上。

家里有小宝宝的可能深有体会,小孩经常不爱吃饭,特别挑食,球球昨天晚上就没有吃饭,一直在那里玩,怎么喊都不吃,到了晚上九点多要睡觉了,突然又要吃东西,然后又去啃面包。小孩不按时吃饭,会影响他的生长发育,也会导致身体的不健康。所以我就在想,如果要是做出一些花样的馒头,孩子是不是就更加喜欢啦,食欲也许会增长一些,所以今天我就做了一锅南瓜玫瑰花馒头,说一下我的 *** 步骤。
准备食材:
面粉,酵母,南瓜,白糖。
烹饪步骤:
1.南瓜洗净去皮,切成条状,放入锅中蒸15分钟,拿出来晾凉备用。

烹饪小提示:
1.因为南瓜里面蒸完了以后会有非常多的水分,把多余的水分倒掉,然后放入面粉去搅拌,全程不要再放一滴水。
2.蒸好馒头以后一定要虚蒸五分钟,锅盖不要提前掀开,防止突然掀开馒头塌陷。
3.喜欢吃甜的可以放两勺白糖,多放一些小孩更爱吃。
